THE Hello, World! Egg Breakfast
This was never meant to be a cooking blog, but here we go. Do you like eggs? Are you curious about ways eggs can be delicious? Because I’m offering the egg recipe to end all egg recipes.
And you best make it first before you roll up in my comments to argue. :-)
First, when I can, I take my time with my breakfast. Only MY breakfast because my husband is a grown-up and handles his business and my kids are breakfast chaos personified requesting anything from English Muffins to cookie dough bites (the “no” always goes over well that one).
Back to the eggs. During the week I do a nice little omelet ideally with sliced bell peppers and onions sautéed to a soft, golden state, the kind where you walk in the house and you immediately smell what’s going down.
But that’s not the premium deal. This is simple perfection and it goes a little something like this.
Two soft poached eggs. A couple pieces of toast (or better yet a good English muffin bread and this also works beautifully with gluten free bread, my carb of choice). Slather in soft butter. Eggs served on the toast, sprinkled with salt and a few good cracks of pepper. And on the side? Half of a ripe avocado, sprinkled with salt and a pinch of lemon juice.
Here’s the critical part: get a bite of every item on the plate at the same time.
And walk into your day with pep in your step.
It’s simple and intentional, such a perfect combination of ingredients it feels decadent.
I savor this breakfast. It’s probably a once-a-week meal, often reserved for Sundays, and I look forward to it all week.
This is the life I want to make for myself, one filled with simple pleasures. Fresh sheets, a candle burning at all times, a good playlist on the bluetooth speaker.
Put it in my veins.
It’s the kind of world I write, too, and it especially comes through in Here Comes Baby.
A local coffeeshop and bakehouse (I mean, bakehouse? Are you kidding me with that kind of romance?) inspired the coffeeshop and bakery Bread and Butter in the book. It was such a delight to share scenes of Liz making handmade pie pastry or offering a holiday food tasting for her staff to enjoy.
Those kinds of little details can make a book to me and put the reader right in the middle of the story. Liz and Michael’s love story feels so moving, particularly when it’s anchored in the fact he can make a flat white like no one else and she shines at individual salted pecan pies.
I have to stop or I’ll be snacking.
This kind of small-town romance makes the swoon feel even richer to me.
